RUCHE’ DI CASTAGNOLE MONFERRATO D.O.C. 

“PRO NOBIS”, is the Ruché wine created by the excellent year 2000 harvest. It reflects our constant
desire to improve and the inborn, natural need to comply with mother nature’s deepest dictates.
We would like to guide our nature towards a more and more evolved selection and quality goal. It’s
the “selection” which contributed to create the arrival of this newborn product of our vineyards and
our wine-making experience. First we located the oldest vineyard, where the grapevines, through
a multi-year natural selection, improved their grape production. Then the pruning and the cultivation
techniques were set up in a precise way: a reduced yield but an excellent quality level.
A careful selection of the grape Ruché in the vineyard during the harvest, when the climate was
particularly sunny, gave the basic material to obtain this peculiar and precious “cru”. The best
bunches, placed in baskets and immediately vinified in small barrels to avoid high fermentation
temperatures, gave immediately a great aromatic must together with mineral salts, sugars and
vitamins. The wine we obtained didn’t suffer traumatic filtering before the bottling and in spring, it
developed the malo-lactic fermentation by itself, without mechanical interventions. Bottled in July,
it is placed in commerce in the late autumn. We are not in a hurry since we are sure that a further
refining in bottle, will improve its tasting qualities.

GRAPES. 100% Ruchè di Castagnole Monferrato (Piedmont).

GENERAL DESCRIPTION. The Ruché is a secular vine. We don’t know its origin, but we think it was imported from France at the beginning of last century. There are many tales regarding the origin of its name.
One in particular seems the most reliable: the legend tells that in a farmhouse called “Rocca” (rock), some friars produced this sweet wine to donate to the inhabitants of the local castel (Castel del Poggio). This is the origin of the name “Ruché”. Since it is more delicate than the vines Barbera and Grignolino, the pruning is made in spring. It buds later than other vines and its foliage is of a more vivid green. The vine branches are thicker. It produces a long and thin bunch, with round grapes, full of seeds. The grape is always extremely sweet and ripens too early.

ORGANOLEPTIC DATA. The aromatic persistence is total, involving, beyond any possible written or narrated description. The delicacy of the bouquet, the olfactory sensations and the final aftertaste, blend and mingle in a delicate mixture alternating indescribable colours, scents, tastes, emotions and sensations.
Briefly, the “PRO NOBIS” is the Ruché in its largest taste expansion and dilatation, it is elegance and harmony.
We are certain that the most demanding appraisers of “PRO NOBIS Ruché of Castagnole Monferrato”, will find an answer in the newer and unforgettable sensations given by nature changes.

VINIFICATION AND AGEING. Removal of grape stalks and soft pressing of the bunches with lower sulphur dioxide level. The fermentation in contact with the skins lasts 14/16 days at a temperature of 28-30° C. Malo-lactic fermentation in stainless steel tanks. In spring, the wine is micro-oxygenated with a special equipment which breathes a selected quantity of oxygen into the wine. This technique creates a microoxidation, as occurs in the barriques, avoiding added wooden scents or notes to the wine.

GASTRONOMIC MATCH. It’s a spicy wine which perfectly matches with aromatic and spicy dishes. Excellent
with game: deer, wild boar and hare or with barnyard animals cooked in the same wine. Its characteristics
allow fancy coupling such as Asiatic food, in particular Indian and Thai cuisine..
